Happy Tripe Thursday

I once wrote that one of my favorite restaurants is this Vietnamese pho place. For those of you who don’t know what that is – it’s a noodle soup indigenous to Vietnam and throughout parts of southeast Asia. And it’s delicious. I literally get cravings.
There’s noodle in broth, pieces of thinly slices sirloin, bean sprouts, Thai basil, jalapeno peppers and tripe.

Yummy cow lining. Do you know how hard it is for a right-handed person to grab tripe with chopsticks in the left hand while photographing said tripe with the right hand?

At least I’m amusing her.

Puna, what does tripe taste like? What is it’s texture? Happy Love, I mean Tripe, Thursday!
It’s really good, especially in the pho. It has a slight crunchy texture.
Thanks for not saying “How gross!”
