Bang Bang Shrimp

There was a lot of great food at Neighbor Beth’s birthday party a couple of weeks ago but this dish was my favorite. My absolute favorite.
So I wrote the cook, Miss Liz, to ask for the recipe, along with an apology for calling her husband a bad pool player. She still gave me the recipe. So I’m giving it to you. You should make it. I haven’t yet, but I will make it for bunco in October. And yes, bunco starts this weekend for the year…more to be said about that later I’m sure.
Without any more ado…
Bang Bang Shrimp
1 lb shrimp shelled and deveined (smaller shrimp works best)
1/2 c mayonnaise
1/4 c Thai sweet chili sauce (recipe to follow)
3-5 drops hot chili sauce, just add a few drops (if you are like me, live it up)
Cornstarch to coat shrimp
Mix mayo and sauces for coating
Bread shrimp in cornstarch
Deep fry until lightly brown
Drain on paper towel, put shrimp in a bowl and coat with the sauce
Serve in a lettuce lined bowl, top with chopped scallions
Sweet Chili Thai Sauce
1 c water
1 c rice vinegar
1 cup sugar
2 t fresh ginger root minced
1 t garlic, minced
2 t hot Chile pepper, minced
2 t ketchup
2 t cornstarch
Instead of making the chili sauce I’m going to replace instead with Sriracha sauce instead. I wanted to include the chili sauce recipe just in case you can’t get your hands on some Sriracha sauce. I don’t have a photo of it, sorry!

See the pottery? I have some just like it. It’s Polish pottery and very much a weakness of mine…I’ll show you my set, maybe tonight.
